Professor of management studies at the Faculty of Gastronomy Sciences from the Mondragon University, main body of the Basque Culinary Center in San Sebastian, Spain. Previously, he was the Founder CEO of a network of socially-sustainable enterprises shaped by a chain of culinary schools and community eateries in Bolivia and Colombia, programs related to locally sourced food products, and a high-end awarded restaurant, all performed together with Danish gastronomic entrepreneur Claus Meyer and the Melting Pot Foundation. Michelangelo is a trained chef, that holds an MBA from the University of Roehampton, London.
